When we evaluate the body of a wine, do we use one scale for all wines or one for whites another for reds?

Is there any way to predict how much aeration a wine needs before showing its best. With new bottles - for review or special ones, particularly - I tend to drink them over several days to see how they develop; some wines are better 24, 48 or more hours after inital opening. Obviously, full-bodied young wines (red or white) can take more air than others, but for fear of a wine spoiling, I tend to find I give them too little air and often they seem to be much better right at the end of a meal than at the begining.
How long can an uncorked bottle last. Do you keep it in the refrigerator?

I do not have a good nose for wine, but know what I like in my rieslings. I am at the stage where I want to learn about the subtleties of flavor and character due to climate, vitner, and soil, etc. What current books in publication should a riesling enthusiast pick up and read? Perferrably a good read, not one that reads like a textbook. Thanks.
i just found a riesling called relax. it\'s really good. are there any out east that are semi sweet kind of like a white zin ??

I understand keeping unopened white wine in the fridge will slow or stop the wine from aging but other than that, what is the rationale for your answer? Does keeping a fine bottle of white wine in the fridge do any harm?
I have about 50 bottles of wine priced in the $100-$300 range that I need to move to Wisconsin. Is it legal for me to send it to myself by DHL or FedX? or should I look into over road temp controlled carriers?
Is it possible that a person would not be able to distinquish a red wine from a white wine in a blind tasting - and if so, which wines would be difficult to distinguish??
