why do people say it is better to drink white wine with seafood, etc. and red with meat? I'm a veggie and only really like red!

I had boxed wine in my NON hard cooler, it was out all night and part of a day, is it still drinkable? OR should I dump it?
Hello, I have a couple of good bottles of red wine (Brunello, Malbec, Bordeaux etc) that I bought during my trips to several wine regions. I keep them at 58F in my wine refrigerator. I am moving to another country and I would like to know if I can bring back the bottles to room temperature to transport them. I only have about 8 that are important so I would check them in with my luggage. Would that be ok? Or once the wine is chilled I shouldn't change the temperature?
Hello! I was given an old madeira wine bottle from 1967 that I am trying to find information about. I have looked everywhere on the internet without results. I even consulted the local wine expert and even he did not know who has produced this wine. The label says Madeira Velho (Old madeira), Verdelho, vintage 1967, estate bottled and the letters Q S. How does one tell how long a red wine should be stored and know when it is peaking so it can be enjoyed best?
The subject of sulfites always confuses me. As far as I know they help preserve the wine, but are there rules on minimum and maximum amounts of sulfites allowed in each bottle of wine? Is the added amount of sulfites higher in the US than it is in Italy? Do red wines contain less sulfites than white wines? And lastly, during which wine making process are the sulfites added, is it during the bottling stage or before. Do you know of great resources I could read up on? Also for licensing, permits and such are in-home wine tastings categorized under the retail sector of wine regulations?
