What wine with tripe prepared in Hungarian or norther Italian style? This is a thick hearty stew with tripe sliced 1/4 thick and a couple inches long w/red & green peppers, tomato, veggies.

There are several very good pairing options for the hearty stew with tomatoes and peppers. Your description leads me to an Italian red wine that possesses enough intensity of flavor to deal with the preparation style together with the acidity to handle the vegetables. You could opt for a Barbera d'Alba or for a more complex and intense Barbaresco, depending on your budget. A Sangiovese-based Tuscan red that is not too powerful would certainly work as well, perhaps a Chianti Classico. All these wines are in good distribution.
