What is the drinking window for a Lynch-Moussas 2004 (single bottle) and what food should I pair it with ?

The 2004 vintage in Bordeaux produced, as a general rule, rather lighter red wines which are already drinking well. Of course, there are a few more concentrated, longer lived examples of the vintage, but that isn't the case with Lynch Moussas. You can pull the cork now, or keep the wine a few more years. As to food pairings, I would suggest dishes of moderate intensity and seasoning: roast chicken; chicken breasts in light sauces, perhaps with white mushrooms; pork chops or roast with herbs; veal with a light reduction or a (dry) Marsala-flavored sauce; or dishes such as paella or jambalaya.
