Answer From Expert Roger Bohmrich MW

This seems to be a very popular question which I have answered in one form or another many times on the LWE forum. It makes me wonder if someone is telling wine drinkers that their favorite vintages will be ruined if they move them from the refrigerator to room temperature. The short answer is that there is no reason at all to worry with respect to table wines. Sake is a somewhat different question, on the other hand, since the better premium types are relatively fragile and are best stored in stable, cool conditions such as in a wine, but not kitchen, refrigerator. But you only need to do so if you intend on keeping a bottle for months. Ideally, it makes sense to buy sake as you need it as it is not intended for aging. By the way, if you are really serious about the top qualities of sake, seek out a retailer who keeps their stock in a cooler, not on the shelf.
