Pickling Fish

what is the best wine for pickling fish?

There are probably several wines that would be good for pickling although I have never tried to do this myself. I assume this might pertain to herring, for example, or a similar fish. I would think that any young, light, unoaked, very dry white wine that is not too costly would be possible: Muscadet, Petit Chablis, Moschofilero (Greece), Touraine Sauvignon Blanc (France). Have you considered pickling with lemon or lime juice as in some ceviche recipes?
