What is the best food to serve with Ice Wine?

Ice wine is typically very sweet and also very high in acidity, which serves to mask the acidity and give the wine a razor-sharp edge. Ice wines do vary according to the grape variety, but let me make some general comments. Since these wines are actually quite delicate and can easily be overwhelmed by many foods, you do need to choose the accompaniment with care to show the wine to its best advantage. Fruit tarts would be wonderful, particularly those with apple or pear, as well as fresh fruit soups (yes, fruit) served chilled. Simple pastries with subtle flavors including pound cake and madeleines should also be good partners, allowing the wine to be the star.
