I really need more information about the wine in order to answer your question. Are you referring to the retail wine merchant in Oregon, Sundance Wine Cellars? If so, which wine exactly do you have - or is it something completely different? I would say, in most recipes, there is a great deal of latitude in terms of wines which will be successful. Typically, only a small amount of wine is added, except for wine-based stews such as the classic French coq au vin or similar preparations calling for red wine. In any case, the alcohol burns off and the flavors are altered and combined with others. Even if your white has a modest level of residual sugar, it doesn't mean it isn't suitable, only that it will contribute a slightly different effect to the dish, rendering it a bit richer and not as sharp in taste.
