Wine Vault & Bistro is pleased to announce a 5-course wine dinner featuring Lindquist and Verdad wineries from California’s Central Coast. Legendary winemaker and original Rhone Ranger, Bob Lindquist will be here in person along with his wife and fellow winemaker Louisa Sawyer Lindquist to host the dinner.
This promises to be an amazing opportunity to rub elbows with some of the pioneering winemakers of the area (think Zaca Mesa, Qupe, Au Bon Climat) while enjoying their wines perfectly paired with chef’s creations. We hope you'll be able to join us! Wine notes and bottle prices are at the end of this announcement if you're interested. Here's the line-up:

HEAD’S UP
Seating is EXTREMELY limited. We have a limited number of tables for couples who want to sit by themselves so please let us know if you’re willing to sit at communal tables as that will GREATLY increase your chances of getting in. We also have the two firepit tables on the patio for two (https://www.winevaultbistro.com/fire-pit) available if you don’t mind sitting at a lower, coffee table height table. Also, please consider inviting another couple or two to join you as if you’re a party of four or six there won’t be a problem getting your own table. We are currently limiting party sizes to a maximum of six.

PARKING
On-street parking is usually available within a 3-block radius. Meters are free after 6:00 so if you park at a metered spot just put in enough money (probably less than a buck) to get you to 6:00 and then you’re home free. You can also park in the lot behind Shakespeare Pub two doors down, but do not park in El Indio's lot unless you want your car towed! If you can’t find parking next to the restaurant, there’s always LOTS OF PARKING on San Diego Avenue and the adjacent side streets just past the Chevron station across Washington Street. So please don't drive yourself crazy endlessly going around in circles waiting to pounce on that perfect spot when there's TONS OF PARKING less than three blocks away!
WINE SALES
Although some wines may be in limited quantities, all wines poured at this dinner will be available for purchase at the restaurant until sold out. We reserve the right to limit sales of any rare or allocated wines at our discretion.
WINE NOTES & BOTTLE PRICES
2023 Verdad “Rusack Vineyard” Sauvignon Blanc ~ $24
(Ballard Canyon) Winemaker’s Notes: Aromas of exotic citrus and figs and are followed by lush fig and peach flavors with hints of mandarins and white flowers and a touch of bitter almonds. The texture is round and silky and pleasing on the palate.
2023 Lindquist “Bien Nacido Vineyard” Chardonnay ~ $22
(Santa Maria Valley) Winemaker’s Notes: 97% Chardonnay + 3% Viognier. This is classic Bien Nacido Chardonnay, with hints of minerals, apple, pear and tropical notes. The oak component is well integrated and adds the right complexity and richness. It is full in the mouth with nice acidity and freshness and will age well.
2021 Lindquist GSM ~ $25
(Central Coast) Winemaker’s Notes: 47% Grenache, 28% Syrah + 25% Mourvedre. Fresh aromas of cherry, raspberry and baking spice lead into a tightly wound palate with juicy red fruits balanced by rocky minerality and peppery spices. Easy to drink yet complex.
2020 Verdad Tempranillo ~ $23
(Central Coast) Winemaker’s Notes: Intense cassis and elderberry aromas entice the nose on this blend of grapes from the Sawyer Lindquist and Martian Ranch vineyards. The palate is ripe and ready for enjoyment, with wet rock and white pepper lifting the fresh fruit core.
WV&B’s Quadruple Barrel Aged Manhattan ~ $20 (200ml hip flask)
A magical blend of premium Bourbon, Antica Carpano Italian Sweet Vermouth, a touch of Rye and Luxardo Cherry Liqueur plus a splash of special Old Fashioned Bitters all seamlessly aged together in four charred oak barrels solera style since 2020. Affectionately called our “covid cuvee,” we started the first barrel in March of 2020 as a treat for our take-out winemaker dinner customers to enjoy while they waited in line for their orders. We gradually added more barrels over the years but have never let the original barrel go completely dry so there’s always a little bit of every single year’s batch (going on five years now!) in every single bottle. The result? The best Manhattan you’ll ever have with an unduplicatable level of complexity that just goes on and on and on ...
