And we’re back! Pairing #5 is here, with a seasonally-appropriate theme. This time around, we’re focusing on alpine cheeses - aka any cheese that is made using methods similar to those made in the Alps. Think of the "Swiss" cheeses: Gruyere, Emmenthaler, Comte, and such. Alpine cheeses are characterized by their firm yet elastic texture, and low salt content. We’re pairing these with another mountainous region beloved for their wines - Alsace. The wine region of Alsace is unique in France because of the combination of grapes grown there. From German grape varieties like Gewurztraminer and Riesling to sparkling cremants to French staples like Pinot Gris and Pinot Blanc, there are a lot of beautiful wines made in this border region with Germany.
