First, we will taste barrel samples of individual varietals to understand the character of each component. Then, through trial and error, we will experiment with various combinations to arrive at a wine with the structure, flavor, complexity and balance that we seek. We will have plenty of time to sip, share, and compare as we discover combinations that take our taste buds to their happy place. No previous winemaking knowledge necessary!
