Food critic Eric Asimov has described Peruvian gastronomy as: “one of the world’s most important cuisines, and as an exemplar of fusion cuisine, due to its long multicultural history.”
With influences from the cuisines of the indigenous population, including Andean and Amazonian, and those brought by immigrants from Spain and Italy, China and Japan, and Africa, immigrants modified their dishes to use ingredients available in Peru, creating their own fusion of cultures.
