Premiere Series: Tidal Cuisine—Oysters, Seafood, & Wine Pairings

Join us for a evening of fresh flavors from the sea paired to perfection with our wine collection.

What do oysters, seafood, and wines have in common? Complex flavors, the Old World and the New, cultural touchstones, aphrodisia, and a connection between taste and place.

In wine, textures and flavors that come from specific growing regions are called terroir. For bivalve aficionados, merroir is the equivalent concept, one that our experts will explore in this dinner.

Seated in our retail location with the full attention of our expert wine buyer and chef, the evening will begin with a flight of oysters that Chef Julian will procure from a local farm. A long time oyster lover and expert, Julian will not rest until he finds a unique varietal for you.

After that, prepare yourself for his Ecuadorian ceviche. An avid surfer, Julian has tried ceviches throughout Latin America, and you'll be treated to his favorite.

With your appetite whet, we will start to warm things up with a heartier seafood and pasta course.

As always, our wine expert, Aidan, will be partnering to ensure outstanding pairings with each of these courses.

Our evening will come to a bright and refreshing end with a citrus dessert to cleanse your palate, along with a little irresistible chocolate.

At this premiere class, a maximum of 14 guests will receive the best that Formaggio Kitchen has to offer.

We hope you will join us as we transition from the tastes of summer to fall and its cozier evenings and sumptuous dishes.

To fully participate in the class:

1. Reserve your ticket through Eventbrite! Purchase one ticket for each member of your party. The ticket price includes admission for one as well as oysters, a cheese plate, wine, and accompaniments for one.

2. Show up on the day of class! Class will begin at 7:30pm. This is a seated event in our retail learning setting. The duration of the class is about an hour and a half. After class, there will be time to tour our cheese caves as well as shop our expansive product selection (at a 10% discount!).

3. This event is for 21+. Our staff will check IDs at the door.IMPORTANT NOTE: Please reach out to classes@formaggiocambridge.com before the day of your class if you or a member of your party has any food allergies or dietary restrictions.

CANCELLATION POLICY: If you are unable to attend a class, please let us know at least 72 hours before the class is scheduled to take place and we will give you a full refund or a credit for a future class. If you don't let us know in advance of the class, you are not entitled to any refund or credit.
