The night will begin with a warm welcome featuring Piedra De Sol Blanco Grenache Blanc 2023, perfectly paired with Spicy Tequila Tepache Scallops. This opening course features scallops with pineapple, ginger, citrus, honey, cinnamon, and aji amarillo, setting the stage for a delightful evening.
Our first course includes the Ensamble Red Wine Blend 2021, served alongside Crispy Skin Branzino Escabeche. This dish features marinated seabass with olive oil, Spanish sherry vinegar, olives, tomatoes, and a fennel salad, offering a harmonious blend of flavors and textures.
The second course highlights the Plata Pura Merlot 2021, complemented by Latin Short Ribs. Enjoy slow-cooked short ribs with citrus, veal stock, herbs, and spices, paired with blue cheese coconut polenta. This rich and flavorful dish promises a satisfying experience.
For the third course, we present the Vino De Piedra Red Wine Blend with Roasted Bone-in Chicken Mole. The dish includes sweet plantain cakes and pineapple salsa, creating a delightful combination of sweet and savory notes.
The evening will conclude with a sweet note featuring Espuma De Piedra Blanc de Blanc Sparkling Wine, paired with Buñuelo de Viento—a dessert of compressed apple, citrus snow, and citrus gelee. This final course offers a refreshing and elegant finish to the meal.
