An Unforgettable Italian Cooking Experience in the Hamptons

Welcome to an extraordinary culinary journey through Italy, led by Master Chef Gianluca Deiana Abis. Our starting point is Liguria, home to the stunning coastal city of Genoa, where one of the most famous cold sauces in the world was born—Pesto alla Genovese. But forget the food processor! In this class, you’ll learn the true way to make pesto: with a mortar and pestle, just as it has been done for centuries.

From there, we travel to Emilia-Romagna, the heart of Italian gastronomy, famous for its Mortadella, Prosciutto di Parma, and rich Bolognese sauce. Here, you will roll up your sleeves to make fresh egg Tagliatelle pasta completely from scratch—a true Italian staple.

Once your masterpiece is plated, we will gather to enjoy the most authentic, hand-crafted plate of pasta you can find outside of Italy—no passport required! To complete your experience, each class includes a hand-selected Italian appetizer chosen daily by Chef Gianluca, as well as a complimentary glass of wine or cocktail of your choice.

Our classes are designed for all skill levels—whether you’re a passionate home cook eager to dive into every step, or a first-timer who prefers to observe, assist, and, of course, taste! We provide all the equipment and ingredients, all of which can be easily found at your local market if you want to recreate these dishes at home.

During the class, you will learn how and where to source authentic Italian products and how to distinguish them from mass-market imitations, often labeled as “Italian-sounding” but lacking the heritage and quality of true Italian craftsmanship. Understanding the difference between real Parmigiano Reggiano and generic ‘Parmesan,’ or authentic Prosciutto di Parma and processed ham, will elevate your cooking and dining experience.
