1st Course:
Cured Salmon, Frisee, Red Onion, Fennel, Compressed
Orange, Dried Olive, Ginger Emulsion.
2nd Course:
Slow Roasted Pork Belly, Apple Butter, Crispy Kale, Foie
Torchon, Miso Granola.
3rd Course:
Smoked Chicken Tortellini, Charred Cabbage Puree, Fried
Chicken Skins, Shave Brussel Sprouts, Goats Cheese,
Basil.
4th Course:
Grilled Beef Striploin, Beef Cheek Pastrami, Poached
