ABOUT CHEF LENA PYLES | Chef Lena Pyles, a native of Big Spring, TX, found her culinary calling after joining her brother, renowned Southwestern cuisine innovator Stephen Pyles, at the Routh Street Cafe in Dallas. Her career flourished as Executive Chef in top-tier restaurants across Las Vegas, Atlanta, and Houston, but the intense demands of the industry led her to step away in 2003. Seeking respite, Lena and her partner Victoria relocated to Galveston for what was meant to be a brief stay, but the island’s charm and vibrant food scene made it home. In 2017, she took over EATcetera, introducing an Asian fusion menu inspired by her travels to Thailand and her Texan roots, earning acclaim from vegetarian and vegan diners. After 17 years, EATcetera closed in 2024, but Lena remains deeply connected to Galveston, now focused on family, community, and creative pursuits in the kitchen, including her first cookbook.

ABOUT THE 1896 JAMES AND PAULINE FOSTER HOUSE | Completed in July 1896, Charles Bulger designed this two-story house for railroad cashier James Wilson Foster and his wife, Pauline Adoue. Of the seven residential commissions he is known to have designed in 1896, the decorated vergeboards and ornamental wood tie brace beneath the apex of the gable roof elevate the Foster house as one of Bulger’s most elaborate designs. Located in an area of mass destruction during the 1900 Storm, insurance records indicate that the owners cleared storm debris away from their property in October and completed repairs to the house in May 1901.
