December in Medellín, and Colombia as a whole, is a huge celebration. The perfect accompaniment to this month-long celebration is a very special dish - Sancocho. This delicious combination of Colombian flavors and caldo (broth) is often prepared for special occasions such as family gatherings, holidays and social events. Sancocho is not just a soup. It is culture, family, and heritage shared by Colombian farmers. In present day, Sancocho symbolizes hospitality and family. Each region's Sancocho is unique, reflecting the biodiversity and cultural diversity of Colombia.
Sancocho is often prepared with meat (chicken, beef, pork, or fish), yuca, plantain, corn, and a mixture of vegetables and spices that add flavor and depth to the caldo.
Elena's Bakeshop was created in 2020 as a homage to Chef John and Sebastian's mom's - coincidentally both named Elena. Their mission is to share delicious food, create a space for family and friends to enjoy and share stories, and to transport anyone who tries their food to their home country Colombia.
On October 13th you can join Chef John and Sebastian to gather around the olla to share delicious food and stories. In this class you will learn to make a quintessential sancocho with beef, chicken, and pork, arepas, and other accompaniments.
