On Sunday Nov 17th we welcome Chef Scott Siff, Executive Head Chef at Trattoria Fondi, located in The Grand at The Bedford Village Inn.
Chef Scott’s culinary career has taken him from coast to coast. After working in Boston’s fine dining scene for 5 years, gaining experience at various restaurants such as Clio and Westbridge, Scott decided he needed a change of scenery and made his way out west to Seattle, WA. In 2014, he began working at Ethan Stowell Restaurants, Tavolata. A hip italian, pasta centric staple of the Seattle dining scene. Focused on house made pasta and shareable italian plates.
At Tavolata, Scott discovered his love for Italian cooking. It was the simplicity and execution that really caught his eye. In 2016, Scott became the Executive Chef of a newly opened Tavolata.. Scott would go on to be the opening Chef at Cortina in 2018. Ethan Stowell’s biggest venture at the time.
In 2019, Scott was offered the role of Executive Chef at Wolf in NYC, a collaboration between Ethan Stowell and Nordstrom that is situated in Nordstrom flagship store in Manhattan. Located at the bottom of the tallest residential building in the world, the Central Park Tower.
About 5 months after opening, Covid hit NYC and Scott hunkered down with his wife and dogs until the restaurant reopened after two months. After being in NYC for nearly 2 years, Scott received an offer to move back west to Spokane, WA and open a new Tavolata with Ethan Stowell Restaurants.
In 2023, The decision was made to move back east to his wife’s home state of New Hampshire.
Scott is currently the Executive Chef at Trattoria Fondi, a 45 seat Italian restaurant located at the Bedford Village inn. A year into his role there, Scott has put his mark on the food and has created an ever changing, hyper seasonal menu. At this point, there will be no more moving for Scott and he is excited to grow with the New Hampshire dining scene.
Limited seats are available to dine with the fungi and enjoy a meal in a functioning mushroom farm. There are 16 general admission seats, and 3 pairs of VIP seats available.

We enjoy making our dinner events as interactive as possible. If you have questions about mushroom farming, foraging, or mushrooms in general, Dunk will be there to chat with the room, and the Chef will be available as each course is served, to talk about the masterpiece.
One of our mushroom coffee's will be served, prior to and throughout the dinner.
