Featured in Netflix’s Chef’s Table and with a menu inspired by the intersection of the chefs' respective cultures, Masala y Maiz is one of the most exciting restaurants in Mexico City. Chefs and co-owners Norma Listman and Saqib Keval interrogate the ingredients, cultural foodways, and political movements between South Asia, East Africa, and Mexico. Join them in collaboration with Fidel Caballero, chef and owner of Michelin-starred Corima and 2025 James Beard Best New Restaurant semifinalist, for an exclusive pop-up dinner.
At Corima, which translates to “circle of sharing,” chef Fidel pulls inspiration from the Chihuahuan desert in northern Mexico to highlight ingredients and culinary techniques from where he grew up, while also incorporating influences from his travels in China, Spain, France, and more. At Masala y Maiz, the food is the result of an organic blending of cultures over generations often in response to colonization and displacement. Together these chefs will weave their distinct cultural backgrounds to create a uniquely personal dinner experience that takes diners from New York City to Mexico City and beyond.
