Griffiths is a renowned hunter, angler, and chef, celebrated for his commitment to the conservation of wild game. He is the founder of the New School of Traditional Cookery, which champions sustainable practices in cooking. Griffiths earned a James Beard Award in 2022 for his cookbook, The Hog Book, which focuses on preparing wild game. Alongside Stackhouse, Griffiths is known for his work at Austin's esteemed butchery and farm-to-table restaurant, Dai Due. At their venture, Lo Salvaje, they continue to promote their philosophy of sustainable wild game cuisine.
