Take a break from December’s hustle and bustle to join in a Champagne Celebration with food writer and Chef Instructor, Shawnie Kelley. We’ll ring out 2024 with a decadent holiday meal you can recreate at home for the New Year. We will start with a Champagne mignonette for oysters on the half-shell and smoked salmon carpaccio cut paper-thin, served on brioche toast with roe. For the main entrée, you will learn the technique for properly searing scallops and making a buttery champagne pan sauce. We will discover an unintimidating approach to whipping up a side of Prosecco Parmesan risotto. Class ends with a dessert of champagne-poached pears drizzled with créme Anglaise. We’ll toast to the New Year with a glass of bubbly while you enjoy your dinner.
