You are cordially invited to a truly British affair exploring cheddar and cider.

In honor of Bonfire Night, our Cheddar and Cider pairing class takes us to jolly old England and right back home to New England!

This cheese and drink combination is synonymous with the West Country of England. Our Cheesemonger Jen, will share stories about how and why this came to be. How did apples come to Britain? What is Scrumpy? Who is Cheddar Man? Why is cheddar wrapped in cloth? We'll learn how cheese is made, and specifically, what makes cheddar so different. We'll learn about different types of cider and how it's made. We'll also be talking about history's impact on US views of cheddar as a "boring" cheese, when real, artisan cheddar is alive, complex, and full of the taste of its terrior.

We'll be tasting pairings of cider and cheddar from England and New England. The cheddars will range from savory, sweet, earthy, grassy, and brothy. Ciders will be dry, semi-dry, and sweet. Of course, we'll be tasting a variety of accompaniments, from mustards to chutneys and jams. This event will naturally be gluten-free.

Jen Tolliver, one of FK's newest cheesemongers, is a certified cider professional and former cheesemaker. She's also a graduate of Ballymaloe Cookery School in County Cork, Ireland and a lover of all things from the British Isles.
