With the wines Jose has selected a nutty, complex, and hard to stop nibbling cheese accompaniment: Il Palagiaccio Gran Mugello Tuscany Riserva. It starts with cow’s milk cheese from a historic dairy and then ages 16 months or more with daily washings in Tuscan olive oil. While it’s firm, it’s also amazingly creamy – in Tuscany they say this is “a cheese to savor, a cheese that melts in your mouth.” And it’s a great match for the reds on the tasting table this weekend, too!
