Diners in Orlando flock to chef Lordfer Lalicon’s Kaya for stupendous Filipino cuisine—a 2024 James Beard Best New Restaurant Nominee and recipient of Florida’s first-ever Michelin Green Star, awarded to restaurants leading the charge in sustainability. Case in point: On his restaurant’s property, chef Lordfer grows calamansi, guava, figs, bananas, lemongrass, marigolds, sweet potato leaves, and more. Before moving back to his home state more than a decade ago, the 20-year industry veteran spent years working at Carbone and at the renowned Blue Hill. For this evening, he will be showcasing modern Filipino flavors and ingredients, paying homage to nose-to-tail eating utilizing fermentation practices—and he will share his homegrown and locally sourced ingredients.
